Bread cups
Brown bread cups filled with chicken and topped with egg yolk.
Ingredients:
- Brown sandwich bread 8 slices
- Eggs
- 8 Cherry tomatoes
- 4 Chicken salami
- 4 Chopped spring onion
- ¼ cup Grated cheese
- ½ cup Salt to taste Butter
Method:
- 20g Cut the brown bread into circles with the help of a cutter or a steel bowl.
- Flatten out the slices using a rolling pin.
- Butter one side of the slices and press inside a muffin cup.
- Separate the yolks and the whites taking care not to break the yolks.
- You will need only half the egg whites.
- Finely chop the salami. You could also use left over chicken or shredded chicken for this.
- Add the salt, pepper to the egg whites and whip well.
- Add the chicken and chopped spring onions.
- Half fill the bread cups with this mixture.
- Carefully slide on one egg yolk (it should not break).
- Top with some grated cheese and place half a cherry tomato on top.
- Bake in a preheated oven for 15 minutes. Serve hot.
